Summer Salads

Picnic after Picnic...
Potatoe Salad, Fruit Salad, Coleslaw, Macaroni Salad, Cauliflower/Brocoli Salad, Spinach Salad, 7-Layer Salad, Pasta Salad, etc. etc.
You get the picture, why is it that only in the summer time do we truely get to enjoy the harvest of the earth. I grew up eating fresh veggies and fruits out of mom and dad's garden every summer and into the winter when mom would can. Still today Mom, Dad, and my sister all have great gardens as for me, I take trips to the local farmes market and try to buy as fresh as I can at the local Hy-Vee grocery store.
This summer I have and continue to "create" new salads. It's so yummy to mix fresh veggies with dried and fresh fruits, maybe some pasta, possibly nuts, and or cheese crumbles of some sort. Then to create a wonderful dressing with fresh herbs that pulls all the flavos together in one master piece, makes my mouth water just thinking about my next creation.

Here was yesterdays Salad...(We went to the Knoll's for an Augustana Alumni Picnic)
-Whole Wheat Tube Pasta
-Fresh Spinach Leaves
-Sliced Red & Yellow Peppers
-Fresh Blueberries
-Cashews
-"Store Bought Baslamic Vinegrette Dressing"

YUMMY -YUMMY!!

Today a standard Home-ade Potatoe Salad... (We're off to the Samulson's so the kids can Slip & Slide and enjoy a Picnic dinner.)
-Red Skinned Potates (leave skin on)
-White Onion
-Hard Boiled Eggs
-Lite Mayo.
-Vinegar & Sugar
-Dijon Mustard
-Pickle Relish
-Paprika for garnish

Those sound great! I may just have to make a summer salad tonight and have a family picnic outside!
